Pandesia Salad with green olive oil

Ingredients for two servings

  • 2 green apples (about 400 gr.)
  • 2 boiled potatoes (300 gr.)
  • 100 gr. fresh pineapple
  • 150 gr. yoghurt
  • 100 gr. mayonnaise
  • 40 gr. grated walnuts
  • 2 toast slices white bread toast

Garnishing materials

  • 2 Lola salad leaves red
  • 10gr Salad Rocket
  • 10gr Curly endive
  • 10gr Red pepper
  • 10gr Fried tortilla spinach
  • 30gr Fresh green olive oil

Preparation - Execution recipe

Peel the apples and rub on a coarse grater.
Boil the potatoes and cut into small cubes. Also cut the pineapple into small cubes. In a bowl, mix the yogurt with the mayonnaise and nuts. Add the apples, potatoes and pineapple and mix.
Arrange the slice of toast in the base of the dish. Spread a height of 1.5 cm. the sauce with apples and other materials.
Garnish with fresh salad on top. Drizzle with fresh green olive oil.
